I have experience doing IFNg ELISPOT with fresh mouse splenocytes. Does anyone have a lot of experience using frozen mouse splenocytes and what % viabilities to expect after thawing? Is there a standard viability cut-off below which you would not proceed with the assay?

Mouse cells are more sensitive compared to human cells. As a result, you often have less viable cells after thawing compared to humans.
Nevertheless, it is possible to run ELISpot on frozen mouse splenocytes if proper protocols are in place.
Viability of thawed splenocytes is often in the range of 85-90% if isolation, freezing and thawing has been done optimally. In humans you often achieve much better than this but mouse splenocytes are simply more sensitive.
